Jayme’s Quinoa Cookies

Jayme, one of my training buddies at Superfastfitnesscamps gave me this recipe, so thank you for sharing Jayme!

This Easter, forget about the eggs and tuck into these scrumptious and guilt free Quinoa Cookies.

INGREDIENTS

1/2 cup of Quinoa flour
1/2 cup of Quinoa Flakes
1/2 cup of Ground Almonds
3tbs ground flax seed
1tsp coconut oil
1/2 raw organic honey
1 egg
1/2 apple puree (one apple with peel in the blender will do it or 100% apple sauce)
1tsp baking soda
3tsp cinnamon


PREPARATION

1. Preheat oven to 175 c
2. Mix dry ingredients in on bowl and mix the wet ingredients in a second bowl
3. Now Mix all together
4 . Place on cookie sheet (they grow much bigger so leave some space between each)
5. Put in oven for 20 mins until they appear golden and dry, they will bake chewy and delicious.


You can also try adding a few 70% chocolate chips to the mix. Yum!
