Anna’s feel good Quinoa Salad

This salad is super quick to prepare and has all the ingredients you need to feel satisfied, light, energised and just great!

I usually make a huge bowl so I can enjoy it for lunch and diner too. I love to eat this on the days I work out, as it makes me feel strong and light at the same time, which means I can workout harder for longer!

Quinoa, 200gr
Baby leaf spinach, 2 handfuls
Tomatoes, 1
Red Pepper, 1
Garlic, 1clove
Red onion, half a red onion
Almonds, 2 handfuls
Organic chicken or veg stock, 1 cube
Parsley or coriander, a few sprigs

Salt, pepper, coconut oil


Simmer the quinoa with the organic chicken/veg. cube in the water for about 15 minutes, or until quinoa triples in size and becomes soft and see though.Sieve excess water.

Chop the tomato, pepper and onion in fine cubes. Finely chop the garlic too. Put everything into a bowl with 2 handfuls of washed baby spinach.

Add the quinoa to the ingredients in the bowl.

Heat a couple of handfuls of almonds in coconut oil for about 2 minutes or until slightly golden.
Add almonds and oil to the mix in the bowl.

Add salt and pepper to taste, and some chopped coriander on the top.

Mix it all well, eat, and feel good!
