Sassy Winter Salad

 Ingredients

Fresh water crest leaves, washed

1 juicy orange, peeled and segmented

1/2 packet sheep or goat feta cheese, cut into little cubes

1 cup or 1/2 mug of red rice or wild rice, boiled

Extra virgin olive oil, balsamic vinegar

Preparation

Arrange the water crest leaves on a salad bowl.

Add the orange segments and feta cheese.

Sprinkle the boiled rice on top.

Pour a trickle of olive oil and balsamic vinegar all over the salad.

The feta cheese will provide the saltiness, but if you need to add a little extra salt, feel free to do so.
