All Good Veggie Patties

Ingredients

1 big courgette

2 big carrots

1 white onion

3 garlic cloves

Fresh coriander

Fresh red chilli, optional

 

Hymalayan rock salt, ground black pepper, coconut flour, coconut oil

 

Preparation

Grate the courgette and carrots into a big bowl.

Finely chop the onion and garlic, and add to the bowl.

Chop the fresh coriander and chilli (optional) and add it too.

Add salt and pepper.

Add coconut flour and some mineral water and work it all with your hands until you achieve a nice consistency for a patty.

Use the mix and your hands to make patties, arrange them on a plate and leave to refrigerate for a couple of hours if possible.

Shallow fry the patties in coconut oil at medium to low heat until cooked through and golden.

Serve with eggs for a yummy breakfast, or with fish or meat for lunch or dinner.

And it’s all good!
