Lucky Green Salad

Ingredients

1/2 green lettuce, washed and roughly chopped leaves

1/2 chervil or rocket, washed and chopped

4 sprigs of fresh basil, washed

4 sprigs of dill, washed

4 sprigs of mint, washed

4 spring onions, washed and finely chopped

1/2 strips of organic bacon, cut into small strips

Apple cider vinegar, extra virgin olive oil, hymalayan rock salt, ground black pepper

 

Preparation

Cook the bacon strips in a shallow pan without oil until golden and crunchy

In a small bowl mix 2-3 tablespoons of olive oil, 1 tablespoon of vinegar, 1 teaspoon of salt and 1 teaspoon of black pepper

Stir well until it looks like an emulsion. Taste and modify if needed

Grab a salad bowl and arrange the lettuce and chervil first, then add the onion and herbs

Sprinkle the bacon strips

Pour the vinaigrette on top and mix well until every leaf is covered

Tuck in and get lucky!
