Tuna & Rice Paper Slims

Have A Tuna Slim To Thin!



2 rice paper wraps (available at Asian & some health supermarkets)

1 can of tuna in brine, drained

3 spring onions, washed and chopped into 1cm cubes

1 ripe avocado, chopped into small cubes

baby spinach leaves, washed and dried

1 tablespoon of grainy mustard

1 tablespoon of extra virgin olive oil

1/2 of apple cider vinegar

Hymalayan rock salt and ground black pepper



In a large bowl filled with warm water, soak 1 rice paper wrapper for about 20 seconds or until soft

Lay wrapper out on a tea towel to absorb excess water

Transfer the rice paperĀ  to a flat surface

In a bowl toss the tuna together with the avocado, spring onions, mustard, olive oil, vinegar, salt and pepper

Lay a few spinach leaves on the rice paper

Add a a good dollop of tuna salad on top

Give the rice paper a full roll

Fold in ends and continue to roll up

Do the same thing with a second rice paper

Enjoy guilt free!
