Posh Monkfish Skewers

400g monkfish fillet, chopped into 3 cm cubes
4 cloves garlic, peeled and crushed
a thumb sized piece of fresh ginger, grated
2 teaspoons cumin seeds, dry fried in a pan
4 tablespoons extra virgin olive oil
the juice of 1 lemon
2 red onions, chopped into 3 cm chunks
2 green peppers, chopped into 3 cm pieces
hymalayan rock salt, ground black pepper

Preparation

In a bowl, mix together the monkfish, garlic, ginger, fried cumin seeds, olive oil and lemon juice

Season with salt and pepper

Marinate in the fridge for 1 hour. Perfect, you can squeeze a workout in here!

Thread the monkfish, red onion and green pepper chunks alternately onto long wooden or metal skewers, making 10-12 skewers in all (if using wooden skewers soak them in cold water for at least an hour beforehand)

Cook the monkfish skewers on a pre-heated oven grill or bbq for around 4 minutes on each side, until cooked through
