A Soul Warming Soup Perfect For Winter


Ingredients (serves 2)

150g gluten free vermicelli rice noodles

150g organic chicken strips (fried in coconut oil or grilled)

Pok Choi leaves, washed

1 fresh red chilli, deseeded and finely chopped

4 spring onions, washed and finely chopped

1 wheat&gluten free chicken or beef stock cube (melted in 1 pint of boiling water)

200ml coconut milk

a sprig of fresh coriander,roughly chopped

hymalayan rock salt, ground black pepper


Soak the vermicelli noodles in a bowl with boiled water for about 1 minute.

Heat up the chicken or beef stock in a deep pan and add the noodles and coconut milk.

Let it lightly simmer.

Add the chicken, pok choi, spring onion and chilli.

Add salt and pepper to taste.

Sprinkle with coriander.

Serve in a piping hot bowl.
