Tiny Tai Bites

A Tasty Low Carb Meal

Ingredients (serves 3-4)

450g minced organic beef (you can also use organic chicken)

6 spring onions, finely sliced (keep 2 aside for the salad)

a thumb sized piece of fresh ginger, grated

a red chilli, deseeded and finely chopped

2 garlic cloves, peeled and finely sliced

the juice and zest on 1 lime

a sprig of fresh coriander, finely chopped

1 cucumber, finely sliced

hymalayan rock salt, extra virgin olive oil, balsamic or white wine vinegar

Preparation

Preheat the oven to 180 degrees.

In a big bowl mix the mince with the garlic, ginger, chilli, coriander, spring onions and lime zest.

Mix it all well, and make about 12 small patties.

Place on an oven tray and cook for about 15-20 minutes.

In a small salad bowl mix the cucumber slices with the rest of the chopped spring onion.

Salt to taste. Add a dollop of extra virgin olive oil and some vinegar.

Mix it all well.

Make your tastebuds happy!
