Prawn and Grapefruit Salad

Ingredients

2 red (or white) ripe grapefruits, peeled, deseeded and cut into segments

200gr cooked prawns

a handful of unsalted almonds, toasted

a sprig of fresh coriander, finely chopped

a spring of fresh basil, finely chopped

a couple of mint leaves, chopped

1 tablespoon of honey

1/2 a lemon, juiced

1 tablespoon of soya sauce

2 tablespoons of water

Preparation

For the dressing, put the lemon juice, soya sauce, water and honey in a small pan on a low heat.

Leave for a couple of minutes until warm (avoid boiling!). Then leave aside.

Put the prawns, grapefruit and almonds in a big salad bowl.

Add the chopped mint, basil and coriander.

Add the dressing and mix it all well.

Eat at room temperature.

Enjoy!
