Ingredients
350gr stir fry lamb strings or cubes (preferably organic)
1/2pint natural greek yogurt
1 heaped tablespoon ground ginger or fresh ginger grated
1-2 garlic cloves crushed
handful of coriander leaves, chopped
2 pinches of crushed dried chillies or cayenne pepper
a handful of fresh spring onions, chopped
coconut oil, hymalayan rock salt
Preparation
Put the lamb on a meat board, cover with cling film and tenderise it a bit.
Mix the yogurt with the ginger, garlic, coriander, chilli or cayenne, and some salt.
In a bowl, spoon the mixture all over the meat, covering all the meat well.
Cover the meat with foil and let to marinate for a couple of hours (go work out!)
Heat a shallow pan with some coconut oil and fry the lamb until golden
and slightly pink in the middle.
Transfer the lamb onto a plate and sprinkle with the spring onions.
If you want to add some carbohydrates, add 50 gr of cooked brown rice pasta, or rice.
