At the risk of blowing my own trumpet, this is one of my quickest, simplest and most delicious culinary inventions. It will really tickle your tastebuds!
Ingredients (serves 2)
150-200gr cooked king prawns
1 big ripe organic tomato, chopped into small cubes
1 small organic red onion, finely sliced
1 garlic clove, very finely chopped
Thai red curry paste (I use Thai Gold for it’s natural ingredients)
coconut oil, hymalayan rock salt, ground black pepper
optional: a few fresh basil or pok choi leaves
Preparation
Heat a tablespoon of coconut oil in a shallow pan.
Add a tablespoon of red curry paste and swirl around the pan.
Add the garlic and the onion and sauteé them until slightly golden.
Add the tomato. Mix it all well with a wooden spoon.
Finally, add the prawns for about 30 seconds and mix them well with the veg.
If you want to add some greens, add some torn basil or pok choi leaves now.
Add salt and pepper to taste.
