De-bloating Celery, Carrot and Onion Consomé

For breakfast, lunch or dinner!


4 organic celery sticks, washed and chopped into small cubes

4 organic carrots, washed and chopped into small cubes

1/2 organic big white onion, very finely chopped

2 garlic cloves, peeled and smashed

1/2 beef stock cube (I use Kallo’s Gluten Lactose and GM free)

Extra virgin olive oil, hymalayan crystal salt, ground black pepper, fresh parsley


Put the kettle on with about 1.2 litres of water.

In a deep pan with a big dollop of olive oil in it, sauté the garlic and onion until slightly golden (but not charred!).

Add the celery and carrot. Mix it all well so it gets covered with olive oil.

Add salt and lots of pepper. Mix it all again.

Add the boiled water from the kettle and the stock cube.

Stir and let it simmer for about 10 minutes. You want the veggies still crunchy.

Serve hot in a bowl sprinkled with some finely chopped fresh parsley.
