Your Easter Treat: Spanish Torrijas

Warning: Extremely Delicious!


750gr brioche style bread, or a 1 or 2 days old loaf of bread/baguette, cut into slices (about 5cms thick)

1litre organic full fat milk

100gr sugar

2 cinnamon sticks

1 or 2 organic eggs, beaten

Extra virgin olive oil, ground cinnamon and sugar


In a deep pan heat the milk, and add the cinnamon sticks and the sugar.

Stir it all well and let it cool for about 20 mins.

Arrange the bread slices on a tray or big deep plate.

Pour the milk over them making sure they are all soaked. Turn them upside down one by one.

Then, soak them one by one in the beaten egg and fry them in olive oil until golden.

Make sure you turn them on the pan, so they are cooked all over.

Once cooked arrange them on a big plate with kitchen towel on it to drain excess oil.

Coat them with a generous amount of ground cinnamon and sugar.

Torrijas are not to be underestimated. They are extremely delicious!
