Hot&Quick Chile Con Carne


There are infinite recipes for Chile Con Carne, with all sorts of ingredients and cooking methods.

I like to keep it simple, so here’s mine!


350gr organic beef mince

2 white onions, finely chopped

2 garlic cloves, crushed

1 organic beef or vegetable stock cube, dissolved in 200ml hot water

1 tin of organic red beans, or mixed beans (no added salt) drained

1 tablespoon ground chilli

1 teaspoon cinnamon

Hymalayan rock salt, ground black pepper, fresh parsley (finely chopped), extra virgin olive oil


First, in a big shallow pan with olive oil sautée the onions and the garlic until golden.

Take them out of the pan and onto a plate (drain any extra oil back onto the pan).

In the same pan and oil, seal the mince, let it become nice and golden on one side before you stir around.

Cover the mince with the stock water.

Add the beans.

Add the cinnamon, chilli, salt and pepper.

Lower the heat and let it simmer for about 20 minutes or so

(keep an eye on it and make sure you stir it every now and again)

Sprinkle with the parsley.

I like to serve it hot on a bed of organic baby spinach, and on cheat day I’d add some nachos!
