Wowsers Curried Eggs


Ingredients (serves 2)

4 large organic eggs, boiled for 5-6 minutes and peeled

150grms organic chopped tomatoes (I use tinned tomatoes)

1/2 white onion, peeled and finely chopped

1 garlic clove, peeled and finely chopped

1 teaspoonful of wholegrain mustard

2 teaspoonfuls of curry

1 pinch of cumin

a sprig of fresh coriander, finely chopped

hymalayan rock salt, ground black pepper, coconut oil


In a pan with a dollop of coconut oil, sautée the boiled eggs until slightly golden all around.

Then, put them aside on a plate to rest.

In the same pan, sautée the onion, garlic and mustard until the onion is slightly see through.

Then add the crushed tomatoes, cumin and curry, salt and pepper to taste, and mix it all well.

Let the aromas mix for about 3 minutes at medium heat.

At the end, add the eggs, lower the heat and let it all simmer for a couple more minutes.

Cut the eggs in half, and sprinkle with the fresh coriander.

Serve it on a bed of fresh leaves, or if you have it after a workout or on your cheat day, you can even have it with some brown rice or brown rice pasta.
