Green Lemon Sole: Good For The Soul

Ingredients (serves two)

2 fresh and big lemon sole filets

1 small white onion, peeled and finely chopped

1 garlic clove, peeled and finely chopped

150gr frozen peas

125ml white wine

3 tablespoons of extra virgin olive oil

200ml clean water, filtered or bottled

a few sprigs of fresh mint, washed and very finely chopped

Hymalayan rock salt, ground black pepper


In a deep pan saute the onion and garlic until golden.

Add the frozen peas and the mint and mix it all together.

Add the wine and the water, and let it all simmer until the peas are cooked but crunchy and the sauce has reduced a bit.

Mix the sauce in the mixer for a few seconds until it looks nice and green.

Put the sauce back in the pan and add the salted and peppered lemon sole filets.

Let the fish cook on low heat for about 5 minutes. Shake the pan now and again to avoid the fish sticking to the pan.

Serve on a plate or small bowl with a sprinkle of fresh mint on top.

Good for the soul!
