Chickpea & Cumin Salad

Ingredients

250g cooked chickpeas, tinned or cooked by you, ideally

4 spring onions, very finely chopped

1 tomato, de-seeded and chopped into small cubes

1 garlic clove, peeled and grated

10 black olives, pitted and chopped finely

The juice of 1/2 lemon

1 teaspoon of ground cumin

Extra virgin olive oil, hymalayan rock salt, ground black pepper

Preparation

In a big bowl put the chopped onion, then the chopped tomato and olives, and the grated garlic.

Then add the lemon juice, a dollop of olive oil, salt and pepper to taste and a teaspoon of cumin.

Mix everything well and finally add the cooked chickpeas. Mix again and serve!
