Skinny Salmon In Orange & Lime Sauce

Ingredients (serves 4)

800grms fresh wild salmon filets, skinned and chopped into chunky cubes

3 oranges

2 limes

2 tbspoons dark brown sugar (you read right!)

Fresh parsley sprigs

Extra  virgin olive oil, hymalayan rock salt, ground black pepper, 5 saffron strands


Juice the oranges and limes and in a saucepan warm up the juice and the sugar until it slightly thickens.

Lightly toast the saffron in a pan and add to the juice together with some very finely chopped fresh parsley.

Grill the salmon cubes in a pan with very little oil. Avoid overcooking them! Leave them slightly pink on the inside.

Add salt and pepper to taste.

Put the salmon in small bowls or soup plates and cover with the warm orange and lime sauce.

Serve and enjoy!
