Mum’s Anchovies Vinaigrette

Ricas ricas!


500gr fresh small anchovies or sardines, gutted and cleaned (if you’re squimish ask your fishmonger to do this for you)

250ml extra virgin olive oil

150ml white wine vinegar

2 garlic cloves

Fresh parsley sprigs

Dried chilli flakes

Hymalayan crystal salt


Clean the anchovies by taking out the main bone and carefully washing them in water.

Place them on a serving dish/tray and fully cover them with the white wine vinegar.

Let them cook in the vinegar for about 2 hours. You’ll know they are cooked because their colour will have changed from transparent to white.

Take them out of the vinegar and onto another serving dish.

Finely chop the garlic and parsley.

Cover the anchovies with olive oil, a little vinegar and salt to taste.

Sprinkle the garlic, parsley and dried chilli flakes on top.

Eat straight away or let it marinate for another 30 mins or so.
