Winter Lentil Stew

Rich in zinc - helps boost libido, balance hormones, and mood!


Ingredients (serves 2)

200gr puy lentils

2 medium carrots

1 small white onion

1 leek

1 small tomato

1 garlic clove

Hymalayan rock salt, ground black pepper, extra virgin olive oil, or coconut oil, sweet paprika


Chop the carrots, tomato and leek into rough chunks. Also, smash the garlic clove and finely chop the onion.

In a deep pan with some oil fry the garlic and onion until golden. Add a bay leaf and a tablespoon of paprika.

Add the carrots, tomato and leek chunks.

Add  the lentils and mix it all well.

Add water until lentils are well covered.

Bring to the boil, lower the heat and let it simmer for about 20 minutes or until lentils are soft

(if you see that the stew is getting too dry add some more water).

Add salt and pepper to taste.

There’s an old saying in Spain that goes “lentejas, comida de viejas” (lentils are for old women).
