My Post Workout Saffron Risotto


Warning: To be enjoyed after a tough workout or as your weekly cheat meal!

Ingredients (serves 2-3)

400gr Arborio rice

1/2 big white onion, finely chopped

2 garlic cloves, smashed

1/2 big red pepper, finely chopped

Hymalayan rock salt, ground black pepper, coconut oil, an organic veggie stock cube, a few saffron threads or ground saffron


In a pan with a good dollop of coconut oil sautee the garlic, onion and red pepper until golden.

Add the rice cover it well with the oil and veg.

Cover the rice with water and bring it to a boil without covering the pan.

Lower the heat so the water simmers.

Add the stock cube and the saffron, salt and pepper to taste.

With a wooden spoon keep turning the rice and adding water as needed until rice is cooked with a little crunch to it and it’s still a little runny.

Take it off the fire and let it rest for a few minutes before serving on a bed of baby spinach.
