Roasted Sweet&Spicy Butternut Squash

Sweet and Spicy

Ingredients (serves 2)

1 butternut squash, cut in half, leave the skin on
1 teaspoon of cinnamon
1/2 teaspoon of grated nutmeg
A few cloves
Hymalayan rock salt, ground black pepper, extra virgin olive oil


Remove the seeds and any stringy bits from the inside of the squash halves with a tablespoon.Place the squash halves in an oven dish/tray.

Sprinkle the cloves, cinnamon and nutmeg on top, also some salt and pepper.

Drizzle a little olive oil over the squash pieces.

Preheat the oven to 220ºC/425ºF/Gas Mark 7 degrees celcius.

Place the dish/tray in the oven and cook for about 30 mins or until fork soft.
