Superquick Supergood Stuffed Avocados

Sprinkle some paprika on top!


My mum usually makes these for Xmas dinner, but I just couldn’t wait that long!

Ingredients (serves 2)

2 ripe avocados, peeled and pitted, keep the skins so you can stuff them later

8 cherry tomatoes, quartered

1/2 white onion, finely chopped

10-12 cooked prawns (you can use frozen prawns – defrosted), if they are big cut them in half

Hymalayan rock salt, ground black pepper, Udo’s oil or extra virgin olive oil, organic mayonaise, paprika


In a big salad bowl put the avocado flesh, tomatoes, onion and prawns.

Add a tablespoon of Udo’s oil or extra virgin olive oil, salt and pepper, and a tablespoon of organic mayonaise.

Mix it all well.

Generously stuff the avocado skins with the mix.

Sprinkle them with paprika.

Make them, eat them, love them!
