Thigh Slimming Veggie Curry

Try my thigh slimming curry!

Ingredients

1 head of broccoli, wash, pat with a kitchen towel and break it up into small florets

1 head of cauliflower, wash, pat with a kitchen towel and break it up into small florets

2 carrots, sliced into 1cm rings

1 white onion, finely chopped

3 garlic cloves, smashed with a knife blade

1 can (400ml) of organic coconut milk

Hymalayan rock salt, ground black pepper, organic coconut oil, ground cumin, cardamon seeds, curry powder, kaffir lime leaves, frozen peas (optional)

Preparation

In a big pan with a dollop of coconut oil in it, fry the garlic cloves and onion until golden.

Add a tablespoon of cumin, 8 cardamom seeds, two tablespoons of curry and 2 lime leaves. Swirl it all around the pan.

Add the broccoli, cauliflower and carrots. Mix them well with the spices.

Add the full can of coconut milk. Mix it all well.

Add salt, and pepper and more curry powder to taste.

Leave to cook for about 10 minutes or until vegetables cooked but still crunchy.

Sprinkle a fistful of frozen peas (optional) on top. Let them defrost with the heat.
