Tastylicious Aubergine and Courgette Tortilla

Try not to eat it all in one go...


Ingredients (serves 2)

4 large organic eggs, beat in a big bowl

2 small aubergines, cut into small dice

1 courgette, chopped into small dice

1 ripe tomatoes, peeled and chopped into small squares

1 white onion, finely sliced

Extra virgin olive oil, salt, ground black pepper

100grms parma/serrano ham, sliced into small squares (optional)


In a big non-stick pan with olive oil, cook the onions until golden.

Add the tomatoes, courgette and aubergines and cook slowly until softened.

Add the ham (optional). Mix well with the veg. and add the whisked eggs.

Add salt and pepper to taste. Take into account that ham is already salted!

Leave to cook at low heat for a couple of minutes.

Turn the omelette around using a big plate that covers the pan, and let the other side cook.

Alternatively, you can turn the omelette around and put in the oven until the other side is cooked.
