Ruthie’s Courgette Pasta Marinara


Raw food can be delish!

Ingredients (serves two)

2 medium courgettes

1 small cup Sun Dried tomatoes (not in oil), soak in water for 2 hours

3 ripe tomatoes

1/2 white onion, finely chopped

Fresh basil leaves, chopped

Dried oregano

Fresh parsley sprigs, chopped

1 garlic clove, finely chopped

Hymalayan sea salt

Extra virgin olive oil


Cut the courgettes into long fine stripes or use the grater/slicer to slice them into long thin stripes. Steam them for 4 mins or so.

Cut up and blend the tomatoes in a blender.

Drain the sun dried tomatoes (save the liquid to thin the sauce later if you need to) and add enough of them to the blended tomato. Blend until the mixture is thickened.

Add the garlic, onion, a dollop of olive oil, a little parsley, fresh basil, and sprinkle with oregano. Add salt to taste. Blend some more until you attain desired texture.
